Can you make the skin of your smoked chicken crispy?

Teenagers as well as 60’s are now becoming inclined to smoked meat day by day. It’s not only because of the taste, health benefits also play a vital role to drive them towards the gloriously smoked wings and all other meat.

But, last night my 9 years old Jessica asked me to make the skin of our smoked chicken as crispy as we get on the deep fried chicken. Hearing her demand, I became perplexed for a few seconds. Then her dad (my super hero) appears as Maecenas and helps me get a crispy layer.

The surprising fact is that — the bible method of smoking — I mean, smoking low and slow won’t help you get such a layer. Then, how to do so?

Well, you have to play with the temperature and moisture to make your kids shout WoW if they beg you for crispy layer on smoked chicken. The final result was amazing. We enjoyed a delicious smoked dish last night.
