My Spicy Garlic Confit Broccolini Slider Recipe
You’ve already known how do I cook chicken and I also know the name of today’s food doesn’t roll off the tongue.
But stay with me on this one! This is incredible and so different. It’s flavorful and refreshing.
Let’s start with the spicy garlic confit. I used 4 heads of garlic that I peeled. Place them in a skillet or frying pan and top with good quality olive oil. I added fresh thyme as well. Cover over low heat for 45–60 minutes.
Very important the heat is very low. Once done you should be able to mash a clove very easily. Strain the oil and garlic. Make sure you save this oil and it’s packed with flavor from the garlic and thyme (so good).
Add the garlic and 1–2 tablespoons of crushed calabrian chili peppers to a bowl and mix well. I also added 2 tablespoons of the fresh garlic oil. This sauce is amazing!
Let’s make the white sauce. I mixed ricotta cheese and garlic oil together. Super simple.
I cut the broccolini into bit sized pieces and cooked them over med high heat in the fresh garlic oil on the Blackstone griddle. I cooked them for 7–10 minutes until they started to caramelize. Drizzle with half a lemon and salt.
I toasted a brioche bun in butter and topped with the ricotta sauce. I added a few thin slices of prosciutto. Then add a heaping spoonful or two of the broccolini. Add freshly grated Parmesan. I added the spicy garlic spread to the top half of the bun as you can see. Finally cap the slider and serve!
