How Did I Try Chicken Yesterday

I did “Glenda Springs Chicken” (Outback restaurant copycat) for the first time on my Blackstone, and also sautéed fresh pineapple.

Normally I would have to marinate overnight, and then bake in the oven for 45 minutes. This was so quick and easy on the griddle!

But, you’ve to make sure your chicken is not undercooked if you expect the best taste. However, here’s the recipe-

GLENDA SPRINGS CHICKEN

* 2 Chicken Breast sliced in half (butterfly style)

* ½ c Mayonnaise, Dukes preferred

* 2 tbsp favorite seasoning. I used salt, pepper and paprika.

* 8 slices Bacon

* 1 cup Monterey Jack Cheese, shredded

* 1 cup cheddar cheese, shredded

* 1/4 cup Dijon Mustard

* 1/4 cup honey

* 1/2 t lemon juice

* Dried parsley for garnish

Use extra honey and mustard mixture for dipping!

1. Trim chicken and either lightly pound it thin, or butterfly for thinner chicken.

2. Mix Duke’s mayo and 2 tbsp seasoning together, and slather on both sides of chicken.

3. Turn griddle on low heat on one side and cook bacon.

4. Add chicken breast to medium heat and cook 4–5 minutes or until golden brown.

5. Flip chicken, and spread 1–2 tbsp of the mustard, honey and lemon juice mixture. Top with bacon, and a handful of freshly shredded cheese.

6. Put a dome over the chicken for about 4–5 minutes to finish cooking and melt cheese.

7. Garnish with dried parsley
