Ben Fabian’s Gameday Smoked Beef Roast | Easy Beginner Recipe With Fantastic Results
I’m an amateur cook, but your readership incline me to cook more. You’re really awesome, you’re my true friends. So, without any more intro, I’m gonna share another delicious recipe right now.
Start off with a nice size beef roast. Anything under 3 lbs is a waste of your time — the meat will shrink too much with the salt being added here. A good 3.5 to 4 lbs will work perfectly.
For this recipe, you will need the following:
- spicy/deli mustard,
- coarse salt (I prefer course sea salt, but whatever floats your boat),
- garlic pepper,
- onion salt and
- fresh cracked black pepper.
Prep the meat by rinsing in cold water and patting it down with paper towels. On a good size plate, coat the roast with the deli mustard. I personally like Grey Poupon Country Style, but any deli mustard will do.
Combine equal portions of the coarse salt, onion salt, garlic pepper, and black pepper in a bowl and mix. Typically you want at least a tablespoon per pound of meat. Sprinkle the mixture LIBERALLY over the meat, and pat in.
Transfer the meat to the grill or smoker and cook at 225–250 degrees. Cooking times will vary but generally think about 45 minutes to an hour per pound for beef.
I like to use either mesquite wood or hickory wood, but I have also used pecan wood and gotten amazing results.
Use a cooking thermometer to determine doneness — 130 degrees = medium-rare, 145 = medium, 150 = medium/well, 155+= well done.
When cooked to a desired internal temp, transfer to a serving plate and let sit for at least 10–15 minutes. Allowing the meat to sit this way lets the juices spread back through the meat from the center.
Carve up and serve!
If you are using a vertical water smoker, I also recommend cooking a simple vegetable medley in the water pan while the meat smokes. I typically throw in chopped onion, carrots, potatoes, and peas.
The meat smoking above the water pan will drip meat drippings into the water as the veggies cook, creating a flavorful vegetable stew. Serve the smoked veggies with the meat for a full meal!
